Fermented Veggies 101 with Laura Poe Mathes

Fermenting vegetables is a great way to preserve your food while also adding nutrition and flavor! Participants in this lecture-based class will learn basic techniques and recipes for easy vegetable fermentation, including sauerkraut, pickles, and kim chi. We will also cover tools and troubleshooting for fermentation beginners, as well as the health benefits and culinary uses for fermented veggies.
Students should bring a notebook/pen to take notes as desired. Laura will be able to answer questions and provide inspiration for future fermentation projects.

About the Instructor: Laura Poe Mathes
Laura is a registered dietitian in private practice in Viroqua, WI. Her health philosophies are based on the principles of traditional diets, using an integrative approach where natural remedies meet evidence-based practices to help improve gut health. She has been fermenting foods for 12 years and loves fermentation, where nutrition meets tradition and the culinary arts.
